If the mechanics of Instant Centaur Sex is the sort of thing you enjoy peppered throughout your science fiction, may I suggest Jack L. Chalker‘s Well World series, the tale of folks who start the morning as one species and find themselves an entirely different species by lunchtime. It is “Chalk” full of that sort of thing! I read it once and it continues to haunt me in the darkest corners.
